Bring a tropical twist to your table with this Pineapple and Tofu Fried Rice. Packed with bold flavours, colourful veggies, and crispy tofu, this one-pan wonder is perfect for a satisfying family meal or a quick, flavourful weeknight dinner.

1 can Spiced Pineapple Chunks

500 grams cooked basmati rice

250 grams tofu, cubed

1 red onion, sliced

4 cloves garlic, minced
-
1 inch ginger, minced
-
1 spring onion, chopped

150 grams green beans, sliced

100 grams carrots, thinly sliced
Sauces and Seasonings

1 to 2 tablespoons Jungle Fire Sauce

2 tablespoons oyster sauce
-
2 tablespoons liquid soy sauce

2 tablespoons dark soy sauce

Salt and pepper (to taste)
Tofu Coating

3 tablespoons corn flour
-
½ teaspoon turmeric
-
½ teaspoon chilli powder

½ teaspoon salt

Oil for stir-frying

Sesame seeds (optional, for garnish)
Directions
Prepare the Tofu
Pat the cubed tofu dry with a paper towel.
In a bowl, mix the corn flour, turmeric, chilli powder, and salt. Coat the tofu cubes evenly in the mixture.
Heat a frying pan with a drizzle of oil and fry the tofu until golden brown on all sides. Remove and drain on paper towels.
Stir-Fry the Vegetables
Add a little more oil to the same pan and heat. Add the sliced red onion and fry for 5 to 6 minutes until fragrant.
Add the minced ginger and garlic, frying for another 2 to 3 minutes.
Stir in the carrots and fry for 1 to 2 minutes with a pinch of salt. Add the green beans and pineapple chunks, mixing well.
Cook the Rice
Add the cooked basmati rice to the pan and mix thoroughly with the vegetables.
Combine with Sauces
In a small bowl, mix the Jungle Fire Sauce, oyster sauce, liquid soy sauce, and dark soy sauce. Pour the sauce mixture into the rice and stir until evenly combined.
Add the Tofu
Gently mix the fried tofu into the rice, along with the chopped spring onion. Stir until well combined.
Serve
Serve the fried rice warm, topped with additional spring onions and sesame seeds, if desired.
