Spicy Noodle Stir Fry

Quick, colourful, and full of bold flavours — this stir-fry combines tender noodles, spiced Jungle Jack, crisp veggies, and a kick of Jungle Fire for the ultimate weeknight meal.

Ingredients

100g noodles of choice, cooked according to package instructions

150g Jungle Jack

Jungle Fire, to taste

150g mixed vegetables of choice

1 small onion, thinly sliced

15ml light soy sauce + 15ml vegan oyster sauce, mixed together

2 spring onions, thinly sliced (for garnish)

1 tbsp sesame oil (optional)

1 tbsp olive oil
Directions
Sauté aromatics: Heat a large skillet over medium heat. Add olive oil, then sauté the sliced onion for 2–3 minutes until fragrant.
Cook Jungle Jack: Add the Jungle Jack, breaking up larger chunks as it cooks. Fry until lightly golden, adding a splash of oil or water if needed to deglaze the pan.
Add veggies and sauce: Stir in your mixed vegetables, Jungle Fire (to taste), and the soy-oyster sauce mixture. Toss well and stir-fry for 2–3 minutes.
Combine with noodles: Add the cooked noodles, mixing well until everything is coated in sauce.
Finish and serve: Taste for seasoning, then drizzle with sesame oil. Garnish with spring onions and serve warm.
Recipe Note
Tip: For extra crunch, top with toasted sesame seeds or crushed peanuts just before serving.
