Rice Stew with Jackseed Masala

This comforting and flavourful rice stew combines the bold taste of Jackseed Masala with fresh vegetables and aromatic spices. A nourishing dish perfect for any meal, it can be enjoyed on its own or paired with raita or Jungle Fire sauce for extra heat.

Ingredients

2 tbsp vegetable oil

1 onion, finely diced

4 garlic cloves, finely chopped

1 can Jackseed Masala

1 tsp sea salt

1½ tsp freshly ground black pepper

50g carrots, julienned

50g green beans, finely sliced
-
50g spinach, chopped
-
50g watercress, spring onion or kale, chopped (or your favourite/seasonal greens)

150g rice of choice
Directions
Heat the oil in a large saucepan over medium heat.
Add the onion and sauté for 5-7 minutes until softened.
Stir in the chopped garlic and cook for 2 minutes more.
Add the carrots and beans, and fry for a few minutes.
Add the Jungle Jackseed Masala and stir-fry well.
Season with salt and pepper, and cook for 4-6 minutes.
Scatter in the rice and cook for 3 minutes.
Pour in 400ml water, stir gently, and bring to a boil.
Cover with a lid, reduce heat to medium-low, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Remove from heat and stir in the spinach and spring onion.
Serve as is, or with raita or Jungle Fire sauce for extra heat.
