1 can Jungle Jack

250g potatoes, peeled, boiled, and mashed

2 red or yellow onions, finely chopped

3–4 garlic cloves, finely chopped

1 tsp curry powder

1 tsp ground cumin
-
A handful of curry leaves

½ pandan leaf

2 tsp ground pepper

1 green chilli, sliced

2–3 tbsp lemon juice

Salt (to taste)

3 tbsp oil

150g flour mixed with water to form a thick batter

2 cups breadcrumbs mixed with a pinch of salt

Directions
Prepare the Filling
Heat 3 tbsp of oil in a saucepan over medium heat.
Add the chopped onions, garlic, curry leaves, and pandan leaf. Sauté until the onions are tender and translucent.
Stir in the green chilli, curry powder, ground cumin, ground pepper, and salt. Sauté for about 1 minute until fragrant.
Add the Jungle Jack mince and combine well. Stir in the mashed potatoes and cook for 5–8 minutes, stirring occasionally.
Taste and adjust seasoning with salt or lemon juice as needed.
Set the mixture aside to cool completely.
Shape the Croquettes
Once cooled, take a spoonful of the mixture and roll it into smooth balls, approximately 1½ inches in diameter.
Place the balls on a parchment-lined baking tray.
Coat the Croquettes
Dip each ball into the flour batter, ensuring it is evenly coated.
Roll the coated balls in the breadcrumb mixture, ensuring an even layer without cracks. If cracks appear, re-dip in the batter and re-coat with breadcrumbs.
Fry the Croquettes
Heat enough oil in a saucepan for deep frying to 350°F (180°C).
Fry the croquettes in small batches for about 1 minute each, or until they turn a deep golden brown. Avoid overcrowding the pan.
Transfer the fried croquettes to a paper towel-lined plate to drain excess oil.
Serve
Serve the croquettes warm with your favourite dipping sauce.
