Okra and Tomato Salad

Experience a fresh burst of flavour with this Okra & Tomato Salad. Lightly blanched okra, juicy tomatoes, and marinated red onions come together with a spicy kick and a nutty crunch — a vibrant side that’s perfect for any occasion.

Ingredients

1 small red onion, finely sliced

3 tbsp extra virgin olive oil

3 tbsp Jungle Fire sauce (adjust to taste)

Salt and pepper, to taste

175g okra, sliced into 2 cm pieces

1 tomato (110g), sliced

50g roasted peanuts, crushed
Directions
In a bowl, combine the sliced onion, olive oil, jungle fire sauce, salt, and pepper. Mix well and let marinate for 10 minutes.
Meanwhile, bring a pot of lightly salted water to a boil. Blanch the okra for about 3 minutes, until slightly tender but still crisp and vibrant green.
Rinse the okra under cold water and drain well. Transfer to a medium-sized mixing bowl.
Pour the marinated onion mixture over the okra and gently toss to combine.
Add the sliced tomato and mix gently.
Scatter the crushed roasted peanuts over the salad and serve immediately.
