Description
Cassava is a large, starchy tuber (root) from a woody shrub in the Euphorbiaceae (spurge) family, native to South America. It is one of the most important staple crops in the tropics, serving as a primary source of carbohydrates for over 800 million people worldwide.
The tuber is large and cylindrical, with a tough, brown, bark-like outer skin and a dense, white or cream-colored flesh inside. The texture when cooked is smooth, starchy, and slightly sticky — similar to a potato but denser and with a subtly sweet, nutty flavor.
Cassava must always be cooked before eating. Raw cassava contains cyanogenic glycosides (compounds that can release cyanide) and is toxic if consumed without proper preparation. - Soak (optional): Soak peeled cassava in water for 30 minutes to reduce any residual bitterness (especially for bitter varieties).
