This Stuffed Baked Breadfruit combines tender jackfruit, a sweet and savoury filling, and a glossy glaze for a stunning centrepiece dish perfect for any occasion.
Ingredients

1 small breadfruit, skinned

50g roasted peanuts

150g Spiced Pineapple Chunks

150g Jungle Jack

4-5 peppercorns

Salt and pepper (to taste)

2 tablespoons strawberry jam or chutney

2 tablespoons soy sauce

For the Glaze
Directions
Boil the Breadfruit
Place the skinned breadfruit in a large pot of boiling water.
Boil for 30–40 minutes until tender. A knife inserted into the center should glide through smoothly.
Let the breadfruit cool for about 1 hour.
Hollow the Breadfruit
Using a small paring knife, gently core out the middle of the breadfruit to create a hollow center about 1–2 inches thick.
Mix the Stuffing
In a small bowl, combine the Jungle Jack, Spiced Pineapple Chunks, and roasted peanuts.
Season with salt and pepper to taste.
Stuff the Breadfruit
Carefully fill the hollowed-out centre of the breadfruit with the prepared stuffing.
Prepare the Glaze
Mix the strawberry jam (or chutney) with soy sauce in a small bowl.
Score and Glaze
Lightly score the top of the breadfruit with a sharp knife.
Brush the breadfruit all over with the glaze mixture, ensuring an even coat.
Press the peppercorns into the breadfruit in a diagonal pattern.
Bake
Preheat the oven to 200°C (390°F) for 10 minutes.
Add 1 inch of water to a baking tray to help steam the breadfruit while baking.
Place the breadfruit on a greased wire rack set over the baking tray.
Bake the breadfruit for 30–40 minutes, brushing with the glaze every 15 minutes.
Brush with a final coat of glaze once out of the oven.
Serving
Serve the Stuffed Baked Breadfruit warm, sliced into portions, and enjoy!
